How do I choose mono in Sunday Mix in Logic?

You can change this with the stereo-mono button located on each specific channel strip. If it is set to stereo (two circles) then you will only see "Input 1-2":

Another note - you'll want to make sure you have all the outputs you need on your audio interface as well.
